After a day of steady housework & gardening, I decided to cook up a storm to keep the bellies full & fired up.
& Recipe:
1/2 cup walnuts, roasted & finely chopped
2 tablespoons pine nuts, toasted in a small skillet & finely chopped
1 garlic clove, minced
1/2 cup chopped flat leaf parsley
2 tablespoons butter, melted
3 tablespoons extra virgin olive oil
1/4 cup grated pecorino Romano or Parmesan, plus extra for garnish
Combine & pour into the bottom of a large bowl and add the hot tortellini to the bowl.
& dessert was a Rhubarb and Mixed Fruits Crumble I made:
Himself has lit the fire in the grate & we're going to watch Dr Who while I finished knitting my youngest the other gauntlet. Her she is wearing the one I've finished:
We were in Mullingar last Sunday & saw the poster for the Festival of the Fires. I wish we were going, but we felt like staying at home today & burn our home fires. Happy Bealtaine!

To a walnut fan such as myself, that looks extremely tempting.
Mise, It's very good. And to think I hated nuts as a child, except for peanut butter. Eating nuts in savory dishes, changed all that for me :)
that recipe does really look amazing. my youngest daughter just moved home for the summer. she is a pasta freak, so im sure we will be trying this one

Oh my! That food looks awesome! My son decided that he's vegetarian now, so I might have to try something like that for him.
